Instant Pot Meatloaf Sliders

I have had a go-to meatloaf recipe for years.  So good that we never have leftovers!  Having no leftovers bummed me out just a little because my favorite part about meatloaf has a sandwich the next day.  I decided to make meatloaf burgers in my Instant Pot to have those delicious meatloaf sandwiches on night one!  These meatloaf burgers are super easy!  I have been playing around with the recipe for the perfect meatloaf glaze for years now!  If you don’t have an Instant Pot, you can absolutely make these meatloaf burgers in the oven or on the grill.  

I have made meatloaf in my Instant Pot ever since I had one, and it is one of the easiest meals to prepare in your pot.   I even have a meatloaf recipe in my book that people have raved about.  I have spent years playing around with the perfect meatloaf glaze.

Growing up, when other kids complained about bringing meatloaf sandwiches in for lunch, I secretly loved it.   So I thought, why not have meatloaf on a sandwich the first night instead of waiting for leftovers?  Plus, grilling season is coming up, and if you don’t have an Instant Pot, you can totally cook these on the grill!

Fantastic meatloaf doesn’t have to be complicated.   All you need is 

1 pound of ground beef

1/2 cup of parmesan cheese

1 egg

1 cup of breadcrumbs

1/4 cup of minced onions.

Meatloaf Glaze

Ketchup

Mustard

Brown Sugar

Worcestershire Sauce

Some Kitchen Supplies that will help you out in the kitchen

Instant Pot

Trivet or Instant Pot Sling

Tin Foil

Medium Sized Mixing Bowl

Ingredients

  • 1 pound ground beef
  • 1 cup Italian breadcrumbs
  • 1/2 cup parmesan cheese
  • 1 small onion finely chopped
  • 1 large egg
  • 2 tablespoons milk

Meatloaf Glaze

  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 2 tablespoons Worcestershire sauce

Instructions

  1. In a medium bowl, mix together ground beef and turkey, bread crumbs, Parmesan, onion, egg, and milk.

  2. Make the glaze. In a medium bowl, mix the ketchup, brown sugar, and Worcestershire sauce until blended.

  3. Mold the ground beef into burger patties. Brush glaze over each patty.

  4. Wrap each burger patty in a tin foil packet.

  5. Pour one cup of water into the bottom of your Instant Pot. Place the trivet or sling in your Instant Pot and stack them.

  6. Cover your Instant Pot and seal the valve. Cook on high pressure for 15 minutes. Let the pressure naturally release.

  7. Prepare sliders and serve.

These sliders are so good!  I personally love the little Pepperidge Farm slider buns, but you can also make these bigger if you want to serve these on a bigger bun.
