After all three of my kids were born, I had friends bring me meals. It is a fantastic feeling to know people care about you when your family is in need. In turn, I love making meals for families in need. It is a great feeling, especially since cooking for people is a way I like to share myself with others.
Some days call for something rustic and delicious. I love soups and stews when it is cold outside. This Beef stew has the essentials. Carrots, onions, and potatoes. But I also added some Southwestern flair. Ah-mazing.

Southwestern Beef Stew
Ingredients
1 pound of stew meat- beef
Two tablespoons of corn starch
Four tablespoons of taco seasoning – taco seasoning recipe below
1/4 cup of chopped celery
One large bell pepper- chopped
Three carrots- chopped
Four small Yukon gold potatoes- chopped and peeled
One small onion- chopped
2 cups of frozen corn
2 cups of beef broth
2-3 green onions- chopped for garnish
Method: In a slow cooker, place beef and mix the meat with corn starch and taco seasoning. Add celery, bell pepper, carrots, potatoes, onion, and frozen corn. Add beef broth and cook on low for 4-6 hours. Add green onions before serving.
Taco seasoning: 2 teaspoons of chili powder, 1 1/2 teaspoons of ground cumin, a dash of salt, 1/2 teaspoon of onion powder, 1/4 teaspoon of oregano, 1/4 teaspoon of garlic powder.
This beef stew was delicious, and I loved the punch of the southwest flavor!
