Gluten-Free Thanksgiving Menu

Do you know what I love about food blogging?   In addition to developing recipes, I love trying out recipes by other bloggers.  There are just so many good ideas out there!   Obviously, when I wanted to come up with a gluten-free Thanksgiving menu, I headed to the search bar on Pinterest to find some recipes that will work for us!

Whether you are looking for gluten-free, dairy-free, vegan, or nut-free, you can type your keywords into the Pinterest search bar and, trust me; you will find what you are looking for.

I had to prepare dinner for around 20 people.  Not everyone who was attending is gluten-free.  But instead of serving just low carb choices, I turned to gluten-free grains.   I also tried to make my menu as hassle-free as possible.  I made anything I could ahead of time, plus I used a lot of crockpots and reached out to relatives to bring dishes.

I cooked sweet potatoes and the mashed potatoes in slow cookers and used my favorite blender stick to smooth them out quickly.  I also cooked my turkey in a countertop roaster.

Coconut Butternut Squash Soup from Kara Lydon.com  – I made this soup a week before Thanksgiving and froze it.

Wild Rice and Sausage Dressing from Martha Stewart – I used a rice cooker.  This saved me a lot of hassle.  I made the stuffing the day before

I actually ended up serving the rice pudding to my nieces and nephews for breakfast the morning after because we already had many desserts.

I really thought his menu was good. The highlight for me was that gluten-free cornbread. I love recipes with cornmeal, and I will be trying that cornbread recipe out for myself again soon.
