Welp, It is March. And we had more snow this weekend…. I figure that is reason enough to make cookies.
I have meant to bake a Cookie or Cake with squash in it for a REALLY long time. But I kept forgetting to get squash at the store. Then when I did I made other things out of it. Like Farmhouse Butternut Squash Farmhouse Hash and Butternut Squash Sloppy Joes. So For about a year ( Yes. that long. ) I have thought about making these chocolate chip squash cookies.
But I took the easy way out. Because, let’s face it. Peeling and Cutting and pureeing a butternut squash can be very labor intensive. Especially, if you only need 1 1/4 cups of it.
I picked up some squash baby food. It is already pureeed for you, no sugar is added, AND it is only 99 cents. This is much easier to use then getting an actual butternut squash. I am a busy mom you know. I also used dark chocolate chips. I don’t like my desserts to be overly sweet.
These Cookies only have 1/4 cup of sugar. They are also sweetened with maple syrup. Yum. I get my 100% Maple Syrup at Aldi for less than $3.00. Great deal
This recipe calls for 1 1/4 cup of Squash Puree. I fully expected the cookies to look ” Oranger”
Squash and Dark Chocolate Chip Cookies ( This recipe was slightly adapted from Farm Girl Gourmet’s Applesauce Chocolate Chip Cookies. I used Squash Puree in place of the applesauce and used less sugar. )
Ingredients
1 stick of butter at room temperature
1/4 cup of white sugar
1 and 1/4 cup of Squash Puree
2 cups of flour. ( I used white. I would look at a conversion chart if you want to use another kind)
1 tsp baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 tablespoons of Maple Syrup
1 teaspoon of vanilla extract
1 cup of dark chocolate chips
1. Preheat the oven to 375 degrees F
2. Cream Butter, Sugar and Maple Syrup and Vanilla.
3. Add Squash Puree and Mix
4. Add Dry Ingredients
5. Add Chocolate Chips
6. Mix
7. Use a Cookie Scoop and make 1 inch balls about 2 inches apart.
8. Bake for 10-14 minutes.
These turned out Amazingly wonderful. I really enjoy Dark chocolate. it pared really well with the hint of Squash and maple.
My two year old boy also thought that these were a ” Great Treat”. He had no idea these contained squash. I have no reason to hide squash from him, he likes it.
I will have to make these again soon. Maybe I will have to make some ” Green” Chocolate Chip Cookies. You can only guess what baby food those will call for!

I would have never thought to put butternut squash in a cookie, that is a great way to get a little nutrition into a treat for your kids. My youngest loves butternut squash so I will make these to see if we can sneak them in past my oldest and husband who do not like it.

I’m bookmarking this recipe! I have two quart baggies of pureed squash in my deep freeze right now. And, for some reason, squash bisque just doesn’t sound as appealing as these COOKIES!
Those cookies look perfect. Thanks for the idea. I love squash but it is time consuming to peel and hack into pieces. And good tip about the maple syrup. I don’t buy it often because it’s so expensive but I have an Aldi’s nearby.
