Slow Cooker or Instant Pot Greek Yogurt Ranch Pulled Chicken

by Kristen

Have I ever told you how obsessed I am with Greek Yogurt Ranch?

Once I realized that you can make a healthy dip using Greek Yogurt- I started making it all the time!  I love dipping baby carrots and vegetable chips in it.  Heck, I could drink the stuff.

On this blog, I have shared with you:

Greek Yogurt Ranch Deviled Eggs

Greek Yogurt Ranch Mashed Potatoes

Greek Yogurt Ranch Crispy Chicken Fingers

and now I am going to show you my new favorite obsession.  Slow Cooker Greek Yogurt Pulled Chicken.

I came up with the idea of using Greek Yogurt in pulled chicken back in November when I made Slow Cooker Chicken Gyros.  I used Greek Yogurt to make the chicken creamy.   Adding ranch flavoring adds another element.

So, what can you make out of Greek Yogurt Pulled Chicken?

anything.   You can make anything.

I have made this a few times now.  I have been into making really basic pulled meat in my slow cooker -or Instant Pot and using that meat in different meals for several days.

So far, I have used Greek Yogurt Ranch Pulled Chicken in:

Sandwiches

Tacos

Chicken and Rice Casserole

and I am sure you could do just about anything with it.  It is so good and flavorful!

Slow Cooker Greek Yogurt Ranch Pulled Chicken

Ingredients

2 pounds of boneless skinless chicken breasts

5 green onions- chopped

3 cloves of garlic- minced

1 1/2 cups of Greek Yogurt ranch- that is 1 greek yogurt ranch packet’s worth of Greek Yogurt ranch.  I use the Greek Yogurt Ranch found here.

Method: In your slow cooker, place chicken, green onions, greek yogurt ranch, and garlic.  Cook on low for 6 hours or on high for 4 hours.  Shred chicken with a fork after it has been cooking for a while.  Serve or put in the fridge for later.

Instant Pot Variation: Place all of the ingredients into your Instant Pot.  Cook on the meat setting or on high pressure for 90 minutes.  When you open up the Instant Pot, you will just need to stir the chicken for it to fall apart.

I love this stuff, and I will make it again soon!
