Parmesan Chicken Sheet Pan Dinner & video tutorial

I have been meaning to post a sheet pan meal forever.   Actually, ever since they started popping up on Facebook about a year ago.   You know what though?  I was pregnant all last year, and never got myself together to do one.   Which is funny, because I actually make dinners like this often.

In lieu of finally completing a sheet pan dinner recipe!  I also made a fun video to share with you too!   I sped the process up a little bit in the video.  This was a totally easy recipe, but it did take a few more than fifty seconds to complete!

I LOVE roasting fresh veggies for dinner.  They always turn out sweet and delicious !   Plus I love breaded parmesan chicken!  Sometimes, it can take a little time to coat chicken with breadcrumbs.   I sometimes revert to the “Lazy way”, by just sprinkling chicken with breadcrumbs and olive oil.

If you don’t have the vegetables I used in this sheet pan dinner- by all means, use what you have!  Cauliflower, broccoli, zucchini, sweet potatoes or cabbage would all taste delicious too!

I don’t know what it is about the salt, parmesan cheese, Italian seasoning and olive oil combo, but it is tasty every time.  My kid gobbled this meal up!

Parmesan Chicken Sheet Pan Dinner 

Ingredients 

1 lb of boneless-skinless chicken tenders

1 lb of asparagus

1 lbs of fingerling potatoes

1 cup of grape tomatoes

1/4 cup of Italian breadcrumbs

1 cup of parmesan cheese

1/4 cup of oilve oil

salt to taste

1 tablespoon Italian seasoning

Method:  Preheat oven to 400 degrees. Arrange chicken on sheet pan,  pound chicken with a meat tenderizer.   Boil potatoes for 5 minutes, and add to the sheet pan.  Add asparagus . Sprinkle the entire pan with parmesan cheese, salt and olive oil.  add Italian seasoning to chicken, and any other component of the dish you please.   Add tomatoes.  Bake for 30 minutes at 400 degrees.  Remove from oven and serve.
