Tips when baking cookies with bread flour

Bread flour will absorb more liquid than regular flour, so you will need less of it when baking.

Do not skip chilling the cookie dough when baking cookies with bread dough. You should chill the cookie dough for at least 30 minutes.

Bread flour has more protein than all-purpose flour, so your baked goods will have a chewier texture when used.

Don’t overbake your cookies– bread flour will bake faster, so make sure you take your cookies out on time!

Ingredients

1 cup bread flour

1/2 teaspoon baking soda

1/4 teaspoon salt

½ cup unsalted butter melted and cooled

1/2 cup packed brown sugar

1/4 cup granulated sugar

One large egg at room temperature

One teaspoon of vanilla extract

1 cup semi-sweet chocolate chips

Optional additional ingredients: You can switch up the flavors by adding sea salt, white chocolate chips, milk chocolate chips, dark chocolate chips, nuts, or dried fruit.

Instructions:

  1. Preheat your oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.
  2.  Whisk the bread flour, baking soda, and salt in a medium bowl. Set aside.
  3.  Cream the melted butter, brown sugar, and granulated sugar in a large bowl until well combined and smooth.
  4. Beat in the eggs, one at a time, ensuring each one is fully incorporated before adding the next. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture until combined. Be careful not to overmix.
  6.  Fold in the chocolate chips until evenly distributed throughout the dough.
  7. Cover the dough and chill it in the refrigerator for at least 30 minutes. Do not skip this step, as it helps to enhance the flavors and chewy texture of the cookies.
  8. Shape and Bake: Scoop the dough and place it on the prepared baking sheets, spacing them about 2 inches apart. These cookies will spread, so ensure you have plenty of room for that.
  9. Bake in the oven for 10-12 minutes until the edges are golden brown, but the centers are still soft.
  10. Remove from the oven; do not transfer them to a cooling rack until they have hardened.

Storage: You can store these at room temperature for two days, OR you can store them in the fridge or freeze them in a freezer bag or another airtight container.  If you are prepping these for a bake sale, you can try wrapping each cookie in plastic wrap.
