What is brown butter?

Brown Butter ( Buerre Noisette) is a classic French staple in the kitchen.  Brown Butter is melted butter with intensified flavor, can be made in under 10 minutes, and boasts a nutty and bold flavor.

Ingredients

Unsalted butter, browned

Honey

Brown sugar

Vanilla extract

1 egg

All-purpose flour

Baking soda

Salt

Chocolate chips or chocolate chunks.  You can use semi-sweet, milk chocolate, or dark chocolate chips.

Optional add-in ingredients: almonds, walnuts, or pecans, flaky sea salt, or dark chocolate chunks.

Equipment

Baking sheet or Sheet pan

Oven

Parchment paper

Wire rack cooling

Stand Mixer

Cookie Scoop

Spatula or wooden spoon

How do you make brown butter?

Melt Butter:
Add unsalted butter, cut into equal slices, to a saucepan over medium-low heat and melt.

Stir and Watch Closely:
The butter will melt, then foam. Stir constantly as the milk solids sink and begin to brown. You’ll smell a nutty aroma.

Remove When Golden Brown:
As soon as the butter turns golden with brown bits at the bottom (not black!), remove it from the heat to stop it from burning. Pour into a heat-safe bowl to cool.

Servings 15 cookies

Ingredients

  • 1/2 cup unsalted butter browned
  • 1/4 cup honey
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Brown the Butter: In a saucepan over medium-low heat, melt even slices of butter until it is brown and smells nutty. Let the butter cool for 10 minutes before proceeding further.

  2. Add brown sugar, honey, vanilla, and egg. Whisk ingredients together.

  3. In a separate bowl, add flour, baking soda, and salt.

  4. Add dry ingredients to the wet ingredients until combined, but don't overmix.

  5. Fold in chocolate chips.

  6. Cover and chill the dough in the fridge for 30-60 minutes. This will help the cookies keep their shape and increase their chewiness.

  7. Preheat oven to 350. Use a cookie scoop to make 1-inch cookie dough balls, and drop them onto a prepared baking sheet. Bake for 10-12 minutes, or until the cookies are golden brown on the outside.

  8. Remove cookies from the oven. Transfer to a cooling rack and let them cool slightly before serving.
