Two-Ingredient Shortcake Biscuits

If strawberry shortcake is on your dessert menu tonight, make these easy shortcake biscuits using only two ingredients! 

These easy two-ingredient biscuits for strawberry shortcake are a delightfully easy twist on this classic dessert. They combine effortlessly and pair wonderfully with fresh strawberries and homemade whipped or vanilla ice cream.

Strawberry shortcake is the perfect summer dessert because it is light and refreshing. There is nothing like ideal summer strawberries, especially when grown locally. Strawberry shortcake is simple and reminds me of childhood, when my mom used to make it on summer nights.  These easy two-ingredient biscuits can be made faster than it would take you to drive to the store for pre-made shortcakes, and they taste so much better!

Ingredients ( makes about 8 biscuits) 

2 cups of self-rising all-purpose flour

1.5 cups of Vanilla Greek Yogurt

2 tablespoons of melted butter ( optional)

1 teaspoon of vanilla ( optional)

More optional add-ins: This is a basic recipe; you can add more to these to elevate the flavor.  Lemon zest, cinnamon sugar, or a little granulated sugar would make these taste fantastic!

Equipment

large  bowl

baking sheets

wire rack for cooling

parchment paper

pastry brush

rolling pin

a biscuit cutter, cookie cutter, or a mason jar lid to cut out the biscuits.

Oven for baking

Instructions

1. Preheat oven to 425°F

2. In a large mixing bowl, mix self-rising flour and Greek yogurt until a dough forms. Don’t overmix. If it is too dry, add a little more Greek Yogurt; if it is too sticky, add a little more flour.

3. Knead the biscuit dough mixture for about 1 minute on a lightly floured surface, but don’t over-knead. Roll the dough out.

4. The dough should be about 3/4 of an inch thick. Cut it into circles using a biscuit cutter, a glass rim, or a mason jar lid.

5. Line a baking sheet with parchment paper and place biscuits on the baking sheet.

6. Bake for 12-15 minutes or until golden brown.

(optional) Brush the biscuits with butter before baking them to make them golden brown.

You can choose to sprinkle a little powdered sugar on top.
