Lemon Sugar Cookies with Blueberry Frosting

Lemon and Blueberries are a match made in heaven! These lemon sugar cookies with blueberry icing are the perfect dessert to serve this summer!

This past winter, I posted a recipe for these winter fruit pizza cookies, and I loved them so much I wanted to come up with a summer version.   I got the idea of making frosting using the juice from frozen blueberries while making smoothies for my kids recently.   I loved how pretty this frosting turned out, and it paired perfectly with my lemon sugar cookie!

Ingredients Needed 

Lemon Sugar Cookie Ingredients

2 cups of All purpose flour

One teaspoon of baking powder

One teaspoon cornstarch

1/2 teaspoon salt

1 cup of softened unsalted butter

1 cup of granulated sugar

Two large eggs

One teaspoon of lemon extract. You can also use vanilla extract or another flavor you like

Blueberry Frosting Ingredients 

1/4 cup defrosted frozen blueberries, smashed – fresh blueberries won’t give you the right consistency.

1 cup powdered sugar

You can also mix thawed frozen blueberries with store-bought vanilla or cream cheese frosting. If you do this, heat the frosting in the microwave for two 20-second increments and stir in the smashed, thawed blueberries.

You can add other fresh fruit to these cookies if you like. Fresh strawberries, blackberries, raspberries, or mandarin oranges would taste delicious!

Equipment

baking sheet or cookie sheet, wire cooling rack, electric mixer- hand mixer or stand mixer, cooking spray or parchment paper

Instructions

1. Preheat oven to 375 degrees f. line or spray baking sheets.

2. In a bowl, whisk together dry ingredients. Flour, baking soda, cornstarch, and salt. Set aside.

3. Cream butter, sugar, eggs, and lemon extract with an electric mixer.

4. Add dry ingredients to the butter mixture and mix until a sugar cookie dough is formed. Don’t overmix.

5. Drop 1-inch balls onto your baking sheet at least one inch apart using a cookie scoop.

6. Bake in the oven for 10 minutes.

 

7. While the cookies are baking, prepare your frosting and fruit.

8. Remove cookies from the oven and let them cool on a wire cooking rack.   Do not frost the cookies until the cookies are thoroughly cooled!

Storage:

You can store these cookies in the refrigerator for up to five days. Please be mindful of what fruit you add because some fruits, like apple slices, will brown if you make the cookies too far in advance.
