Garlic Parmesan Cornflake Chicken

Coating chicken with cornflakes instead of bread crumbs makes the crispiest chicken tenders! This parmesan chicken recipe is fantastic!

Why do cornflakes make a delicious coating for chicken?

Coating chicken with cornflakes is a delicious gluten-free option.  They taste amazing and turn out super crunchy when baked.  The sweet flavor complements the savory nature of the chicken, creating a delicious combination.

Why are we coating our chicken with Mayonnaise? 

Mayonnaise is a pre-made mixture of oil and eggs, so using it eliminates the need to mix oil and eggs separately for dipping.  It’s a quick and easy way to create a binding agent for the breadcrumbs.

This chicken strip dinner is filled with protein and is one of the tastiest weeknight dinners the entire family will enjoy!

Ingredients:

Four boneless, skinless chicken breasts

2 cups cornflakes, crushed

1/2 cup grated Parmesan cheese

Two cloves garlic, minced

One teaspoon of Italian Seasoning

Salt and pepper, to taste

½ cup of mayonnaise

Optional seasonings to add: paprika, basil, garlic powder, garlic salt, black pepper, and parsley flakes.

Equipment

small mixing bowl

Instructions:

  1. Preheat your oven to 375°F. Lightly grease a baking sheet with cooking spray or brush it with olive oil. You can also line it with parchment paper.
  2. Combine the crushed cornflakes, grated Parmesan cheese, minced garlic, dried parsley, salt, and pepper in a shallow dish. Mix well to combine.
  3. Set up a dredging station with two shallow dishes—place mayonnaise in the first dish and the cornflake mixture in the second dish.
  4. Season the chicken breasts with salt and pepper.
  5. Dredge each chicken breast in the mayo, coating it well.  Then, coat the chicken evenly with the cornflake mixture, pressing gently to adhere.
  6. Place the coated chicken breasts on the prepared baking sheet.
  7. Bake in the oven for 20-25 minutes or until the chicken is cooked and the coating is golden brown and crispy.
  8. Once cooked, remove the chicken from the oven and allow it to rest for a few minutes before serving.
  9. Serve your garlic parmesan cornflake chicken with your favorite sides, such as mashed potatoes, steamed vegetables, or a fresh salad.

Storage: Store in a microwave-safe bowl so you can reheat quickly. If you want your leftovers to be extra crispy, reheat in the oven or the air fryer.
