Pop Rocks Cream Cheese Mints

If you like cream cheese mints, you will love this festive version for the 4th of July! These cream cheese mints are coated with pop rocks and will be so much fun to eat!

Cream Cheese butter mints or wedding mints are an easy-to-make party treat that has existed since the early 1900s. Nobody knows exactly where cream cheese mints originated. One theory is a Philadelphia baker invented that cream cheese mints in the early 1900s. Another theory is that cream cheese mints were invented by a homemaker looking for a way to use leftover cream cheese.

Cream cheese mints have become a popular holiday treat. They are often served at Christmas, Baby showers, weddings, graduation parties, brunch receptions,  and bridal showers.   I have switched up the old-fashioned cream cheese mints by adding pop rocks for your American holiday celebrations.   You can add different colors of pop rocks for other special occasions.

Ingredients Needed

4 ounces of softened cream cheese

One teaspoon of softened butter

Four cups of powdered sugar are added one at a time.

One teaspoon of peppermint extract

Strawberry and Blye Raspberry Pop Rocks Candy

Note: You can add food coloring to these to make them even more festive! Traditional food coloring or gel food coloring will work.

Equipment

Wax Paper or Parchment Paper

Cookie Sheet

large Bowl

Hand Mixer or stand mixer.

Fork for pressing down your cream cheese mints

Silicone Candy Molds- if you don’t want to press the mints down with a fork.

Instructions:

  1. In a large bowl, cream the cream cheese and butter until smooth.
  2. Gradually add the powdered sugar, mixing until well combined. You will want a dough-like texture. You can do this by hand or with an electric mixer.
  3. Stir in the peppermint extract.
  4. Roll the mint mixture dough into small balls and place them on a baking sheet lined with parchment paper.
  5. Press down the rolled ball with the tines of a fork.
  6. Carefully place pop rocks candy on top of each cream cheese mint.
  7. Chill in the refrigerator for at least an hour
  8. Enjoy!

Storage. You will want to store these in an airtight container in the fridge for up to two weeks. Avoid stacking these mints so the pop rocks stay on top of the mints and don’t get pressed down too far.   You will want to take them out of the fridge about 30 minutes before serving. They taste the best at room temperature. You can also store these in the freezer.
