Rice Krispie Peanut Butter Cups

These no-bake Rice KrispiesPeanut Butter Cups are gluten-free and can be made dairy free. All you need is a few ingredients and a mini muffin tin!

These Rice Krispies peanut butter cups are a fun and easy recipe to make with kids! All you need is a few pantry ingredients and a mini muffin tin. These taste very similar to a store-bought peanut butter cup but better! This recipe takes the concept of rice krispie treats to the next level while making a treat that tastes similar to Reese’s Peanut Butter Cups.

This is one of the easiest desserts you can make. This is different from the classic Rice Krispies treats because this recipe has no marshmallow mixture.  Thus, no stovetop or oven is needed for this dessert.

Ingredients

Three tablespoons of unsalted softened butter.

3/4 cup peanut butter- creamy peanut butter works best.  

3/4 cup of Powdered sugar

1 1/4 cups of Rice Krispies Cereal

3/4 cup of semi-sweet chocolate chips- or any chocolate you can easily melt

Equipment

Non-stick cooking spray

Mini Muffin Pan

Large Mixing Bowl

Electric Mixer

Rubber Spatula

Microwave Safe bowl for melting chocolate

Instructions

  1. Add butter and peanut butter to a bowl and mix  until combined
  2. Add powdered sugar and mixture until combined.
  3. Fold in rice cereal, but do not mix the rice krispies with an electric mixer.
  4. Spray a Mini Muffin tin with cooking spray. DO NOT USE MUFFIN LINERS with this recipe.
  5. Scoop peanut butter cereal mixture with a cookie scoop and place it in each muffin tin. Make sure the top of the peanut butter mixture is even on top and that the mixture is packed well.
  6. In a microwave-safe bowl, cook chocolate chips in 30-second increments and stir between each go in the microwave.  Once the chocolate is melted and smooth, top each peanut butter cup with melted chocolate.  The tops of the peanut butter cups should be covered with chocolate.

  1. Refrigerate peanut butter cups in the refrigerator for at least 2 hours before serving.

Storage:  You can store these in an airtight container in the fridge for up to five days or in the freezer for up to three months.

  • 3/4 cup creamy peanut butter
  • 3 tablespoons softened butter
  • 3/4 cup powdered sugar
  • 1/25 cups Rice Krispies Cereal
  • 3/4 cup chocolate chips

Instructions

  1. Add butter and peanut butter to a bowl and mix until combined.

  2. Add powdered sugar and mixture until combined.

  3. Fold in rice cereal, but do not mix the rice krispies with an electric mixer.

  4. Spray a Mini Muffin tin with cooking spray. DO NOT USE MUFFIN LINERS with this recipe.
