This easy Italian Cobb Salad puts a delicious Italian twist on the classic Cobb salad for a fresh and satisfying meal.
Sometimes a dinner salad really is enough for dinner. This Italian Cobb Salad is one of those recipes. It’s loaded with fresh vegetables, chicken, salami, cheese, and eggs, so every bite is filling and flavorful.
I love serving this salad during the summer when it’s too hot to turn on the oven, but it’s just as good any time of year. It feels a little more special than an everyday salad, yet it’s simple enough to make on a busy weeknight. The colorful toppings make for a beautiful presentation when serving guests, but once everyone is at the table, just toss everything together with the homemade Parmesan vinaigrette.
