I have been playing around with many different cookie recipes this season. I have a son obsessed with the freeze-dried fruit from Aldi, and I wanted to try to use it in a baking recipe. I love adding fruit to cookies, but sometimes when you add fruit to cookie recipes, it is hard to achieve the chewiness you want. Adding freeze-dried fruit to these cookies kept them the chewy consistency I love but added the fruitiness I also love.
Upon trying these cookies, my seven-year-old son told me that this would be the first cookie he would sell when he opens his cookie shop when he grows up. ( this particular son has a way of always knowing exactly what to say)
You can buy freeze-dried mango at a variety of stores. However, it is the most reasonably priced at ALDI.
How do you get your White Chocolate Macadamia nut to be chewy?
In my opinion, the most important thing to get right when making white chocolate macadamia nut cookies is that the cookies turn out chewy. The most important step to follow to make the cookie chewy is to chill the dough. You should chill the cookie dough for at least an hour. But if you don’t have the time, at least chill the dough for 30 minutes at the very least.
These Cookies call for mostly baking ingredients you already have in your pantry. All you need is:
Butter
Pure Vanilla Extract
Brown Suger
White Sugar
1 egg
1 egg yolk
All-purpose Flour
Baking Soda
Salt
1.2-ounce bag of ALDI freeze-dried mango.
- You will want to make sure that you CRUSH the freeze-dried mango into smaller pieces. Try crushing them while they are still in the bag.
- I also think that these cookies would taste great with Aldi’s freeze-dried strawberries or freeze-dried apples
.Process matters when you make these cookies. It is important to follow all the steps. Especially chilling your dough. Your cookies will turn out flat and spread out if you don’t chill your dough.
Mango White Chocolate Chip Cookies
Ingredients
- 1/2 cup butter at room temp
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 teaspoon pure vanilla extract
- 1 egg
- 1 egg yolk
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup white chocolate chips
- 1/2 cup crushed freeze-dried mango
Instructions

Using an electric mixer, cream butter, white sugar, brown sugar, vanilla, egg, and egg yolk

In a separate bowl, whisk flour, baking soda, and salt.

Slowly add dry ingredients to the wet ingredients while mixing.

Add crushed freeze-dried mango and white chocolate chips.

Place cookie dough in a bowl and cover. Chill in the fridge for at least 1 hour.

Preheat oven to 350 degrees.

Line the baking sheet with parchment paper and place 1 inch balls of dough evenly on the baking sheet.

Cook for 10 minutes.

Remove from oven. Let cool and serve.
