Ranch Pickle Pot Roast

Ranch Pickle Pot Roast is wonderfully tender and tangy.  This roast is flavored with dill pickles, dill pickle juice, onions, and ranch seasoning.  This beef tastes great over rice, potatoes and also makes a tasty sandwich.  I have included a slow cooker and Instant Pot directions to make this delicious roast in a way that works for you! 

About two years ago, I did a round of Whole 30, and one takeaway from experience was the power of pickles.  Adding pickles and pickle juice to recipes is a great way to add a pop of tanginess or sweetness to a meal without sugar or lots of extra calories.  Since then, I had added pickles to several recipes on this site.

Pickle Juice Ranch Chicken 

I got a hold of an old Lutheran church cookbook from Minnesota, and I saw a recipe for a pickle pork roast.  I decided to add ranch because you all know that I am obsessed with pickles and ranch together.

What do you need for a Ranch Pickle Pot Roast

2-3 pound chuck roast

3-4 dill pickles, chopped

1/2 cup of pickle juice

1 ranch seasoning packet

1 yellow onion

1 cup of beef broth

1/2 cup of sour cream, optional

Should I brown my roast?

  • You can cook this roast in your slow cooker or your Instant Pot without browning first.  I rarely brown chuck roasts before cooking them in the Instant Pot or the Slow Cooker.
  • If you choose to brown your chuck roast, follow the rest of the recipe after you brown your roast.

Adding Pickles to your pot roast is a great way to switch up your pot roast! This pot roast tastes great with potatoes, rice, mashed potatoes, or sandwiches.

Slow Cooker Instructions

  1. Place roast in the slow cooker with pickle slices, pickle juice ranch seasoning, beef broth, and onion.  Add potatoes if you like
  2. Slow cook on high for 10 hours or on low for 5-6 hours
  3. Add sour cream to the top of the roast about 1 hour before serving.

Instant Pot Instructions

  1. Place roast in the Instant Pot with pickle slices, pickle juice, ranch seasoning, beef broth, and onion.  Add steamer basket on top of the roast with potatoes if you like.
  2. Cook on high pressure for 30 minutes. And use quick release if you cooked the roast with potatoes.  Cook for 45 minutes if you cooked without potatoes.
  3. Add sour cream to the roast after, and saute the roast in the sauce.

What Cut of Meat do I buy?

A good pot roast can be made with any cut of beef roastchuck roast, round roast, or briskets

  1. Place roast in the Instant Pot with pickle slices, pickle juice, ranch seasoning, beef broth, and onion.  Add steamer basket on top of the roast with potatoes if you like.

Although I wouldn’t say that this is the most attractive meal I have ever made, this was a delicious tender melt-in-your-mouth meal.  My kids love pot roast.  ( They’re not a huge fan of pickles, so I took the pickles off theirs before we ate)

I just came across your recipes today and this looks great! It looks to me like you have the high and low times for the slow cooker mixed up (guessing it should be 10 hours on low, 5-6 on high). I’m looking forward to making this one, with extra pickles soon!
