Abruptly, This fall, all three of my sons started loving and gobbling up cauliflower with cheese. Sometimes I make a cheese sauce, and sometimes I just top the steamed cauliflower with shredded cheese. My middle son, who has never been very excited about eating will have 3-4 servings of cheesy cauliflower; this makes my heart tickle just a little bit.
I sometimes steam cauliflower on the stove, sometimes I buy those microwave bags of steamed cauliflower, but just recently I started steaming cauliflower in my pressure cooker, and it was so amazing because took hardly any time at all! I just steamed it in some cheese sauce and it turned out delicious!
I have had my Instant Pot Duo for almost two years, and I have been reluctant to cook vegetable dishes in it because I have had vegetables disintegrate in it a few times. When I make shredded meat in my Instant Pot, I probably overcook it a little, but it’s okay because it just pulls apart really quickly. However, overcooking vegetables in an Instant Pot can ruin a dish, so it is essential to get the timing just right.
SO a rule of thumb when cooking vegetables in your Instant Pot- you can always add a few extra minutes of cook time, but you can’t salvage smooshed veggies. ( well, you can make soup 🙂 )
This was such an easy side dish, and I ate the leftovers for lunch the next day. Cauliflower is a great food for volume eating. ( volume eating is when you feel like eating a lot of food, but you don’t really want the calories.) To show you how easy this was, please view this video.
Pressure Cooker Cheesy Cauliflower
- 1 large head cauliflower
- 1 tablespoon butter
- 4 ounces cream cheese
- 1 teaspoon ground mustard
- 1/2 teaspoon minced garlic
- 1.5 cups half and half or milk
- 1 cup shredded cheddar cheese
Set your pressure cooker to the saute setting.
add butter, cream cheese, garlic, and ground mustard and whisk together over the heat.
add milk and continue whisking.
Add shredded cheese and keep whisking. until all the cheese is melted into the sauce.
Add cauliflower and cook on high pressure for 2 minutes
open the lid, and enjoy!
This was super good and I might try broccoli next!
