Instructions

Preheat the oven to 350 degrees and prepare a muffin tin with liners or cooking spray. Make sure your egg is at room temperature so it blends smoothly into the batter.

In a large bowl, whisk together the egg, mashed ripe bananas, crushed pineapple, brown sugar, vegetable oil, and vanilla extract. These are your wet ingredients, and they should look glossy and well combined.

Add the self-rising flour and cinnamon directly to the bowl with the wet ingredients. Since self-rising flour already contains salt and soda, there is no need to add extra dry ingredients. Stir gently until a thick batter forms. Do not overmix.
