Sour Cream Banana Oatmeal Bars

These golden brown sour cream banana oatmeal bars are perfect for breakfast, snacks, or a light dessert. They are also a great treat to whip up quickly when you have some ripe bananas to use up! 

Your family will love these banana oat bars! These are nutty, fluffy, and sweet. Plus, these are made with better-for-you ingredients than many baked goods. Your family will immediately beg for these once you pull them out of the oven!

You can make this recipe in an 8×8 pan or as muffins.  

Ingredients

2 ripe bananas, mashed

1/2 cup sour cream

1/4 cup unsalted butter, melted

1/2 cup brown sugar

1 tsp vanilla extract

1 large egg

1 cup all-purpose flour

1/2 cup rolled oats

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp cinnamon

Additional optional ingredients: 1/2 cup of semi-sweet chocolate chips, peanut butter, almonds, pecans, walnuts, other nuts, coconut, raisins, or other dried fruit.

Ingredient Note: Do not use quick oats in this recipe. If you want it to be gluten-free, you can use gluten-free oats.

Equipment:

Large Mixing Bowl 

8×8 baking dish 

Stand or electric mixer

Spatula

Parchment Paper or Cooking Spray

Instructions:

  1. Preheat the oven: Set your oven to 375 and grease or line an 8×8-inch baking pan with parchment paper.
  2. Mix wet ingredients: In a medium bowl, whisk the mashed bananas, sour cream, melted butter, brown sugar, vanilla, and egg until smooth.
  3. Combine dry ingredients: In a separate bowl, stir together the flour, oats, baking powder, baking soda, salt, and cinnamon (if using).
  4. Combine wet and dry: Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. Fold in any additional ingredients you choose to add.
  6. Pour into the pan: Spread the batter evenly into the prepared pan.
  7. Bake: Bake for 20 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  8. Cool and serve: Let the bars cool completely in the pan before slicing them into squares.

Recipe note: If you want to make this recipe into muffins, evenly distribute the batter into the prepared muffin cups, filling each about 3/4 full, and cook for 15-20 minutes.

Storage: These can be stored in an airtight container at room temperature for 3 days or in the fridge or freezer for longer.
