
Pineapple-banana muffins made with ripe bananas and crushed pineapple are an easy, tropical-inspired bake that comes together quickly and delivers a soft, bright-flavored bite.
Preheat oven to 350°F. Line a 12-cup muffin tin with liners or lightly grease.
In a large bowl, whisk together the eggs, mashed banana, crushed pineapple, sugar, oil, and vanilla until smooth.
Add the flour, baking powder, baking soda, salt, and cinnamon directly on top of the wet ingredients. Gently stir just until combined. Do not overmix.
Divide batter evenly into 12 muffin cups, filling each about 3/4 full.
Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
