If strawberry shortcake is on your dessert menu tonight, make these easy shortcake biscuits using only two ingredients!
Preheat oven to 425°F
In a large mixing bowl, mix self-rising flour and Greek yogurt until a dough forms. Don’t overmix. If it is too dry, add a little more Greek Yogurt; if it is too sticky, add a little more flour.
Knead the biscuit dough mixture for about 1 minute on a lightly floured surface, but don’t over-knead. Roll the dough out.
The dough should be about 3/4 of an inch thick. Cut it into circles using a biscuit cutter, a glass rim, or a mason jar lid.
Line a baking sheet with parchment paper and place biscuits on the baking sheet.
(optional) Brush the biscuits with butter before baking them to make them golden brown.
Bake for 12-15 minutes or until golden brown.
Remove from oven and let cool before serving.
