Two-Ingredient Shortcake Biscuits

If strawberry shortcake is on your dessert menu tonight, make these easy shortcake biscuits using only two ingredients!

Ingredients

  • 2 cups self-rising flour
  • 1.5 cups Vanilla Greek Yogurt
  • 2 tbsp melted butter ( optional)
  • 1 tsp vanilla extract ( optional)

Instructions

  1. Preheat oven to 425°F

  2. In a large mixing bowl, mix self-rising flour and Greek yogurt until a dough forms. Don’t overmix. If it is too dry, add a little more Greek Yogurt; if it is too sticky, add a little more flour.

  3. Knead the biscuit dough mixture for about 1 minute on a lightly floured surface, but don’t over-knead. Roll the dough out.

  4. The dough should be about 3/4 of an inch thick. Cut it into circles using a biscuit cutter, a glass rim, or a mason jar lid.

  5. Line a baking sheet with parchment paper and place biscuits on the baking sheet.

  6. (optional) Brush the biscuits with butter before baking them to make them golden brown.

  7. Bake for 12-15 minutes or until golden brown.

  8. Remove from oven and let cool before serving.
