Pistachio Cut Out Cookies

Adding pistachios to your Christmas sugar cookies will be the best culinary decision you can make this holiday season!

You will want to bookmark this recipe for the holidays! These pistachio cutout cookies are amazing and taste delicious with a hot cup of coffee or tea! I made these cookies into Christmas trees, so I did not need green food coloring when making Christmas Cookies!

Pistachios will add saltiness, earthiness, and a crunchy texture to your cut-out cookies!  I love how complex and straightforward these cookies taste!  You can dip them in chocolate l, like I did or decorate them any way you like!

Ingredients

makes 15 cookies 

1¼  cups  all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup light brown sugar, packed

One large egg

One teaspoon of vanilla extract

1/2 cup finely chopped pistachios (unsalted, shelled). I used my food processor to chop mine into fine pieces.

Optional: Chocolate melts for dipping, Icing or sprinkles, and other candies or nuts like almonds or more pistachios for decorating.

Instructions

1. whisk the flour, baking powder, and salt in a medium bowl. Set aside.

2. In a large mixing bowl, beat the softened butter and brown sugar with an electric mixer on medium speed until creamy and fluffy (about 2-3 minutes).

3. Add the egg and vanilla extract to the butter mixture and continue beating until well combined.

4. Gradually add the dry flour mixture to the wet ingredients, mixing quickly until a soft dough forms.

5. Fold in the finely chopped pistachios until evenly distributed throughout the dough.

6. Cover and chill the dough for one hour.

7. Preheat your oven to 350°F  and line baking sheets with parchment paper.

8. Roll out the dough 1/4 inch thick.  Use your favorite cookie cutters to cut out shapes, and place them about 1 inch apart on the prepared baking sheets.

9. Bake cookies in the preheated oven for 10-12 minutes or until the edges are just beginning to turn golden.

10. Make sure you let the cookies cool completely on a wire rack before decorating.

Storage: Store it in an airtight container at room temperature for 3 days or in the fridge or freezer.
