Pistachio Cut Out Cookies

Adding pistachios to your Christmas sugar cookies will be the best culinary decision you can make this holiday season!

Servings 20 cookies

Ingredients

  • 1 & 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped pistachios

Instructions

  1. Whisk the flour, baking powder, and salt in a medium bowl. Set aside.

  2. In a large mixing bowl, beat the softened butter and brown sugar with an electric mixer on medium speed until creamy and fluffy (about 2-3 minutes).

  3. Add the egg and vanilla extract to the butter mixture and continue beating until well combined.

  4. Gradually add the dry flour mixture to the wet ingredients, mixing quickly until a soft dough forms.

  5. Fold in the finely chopped pistachios until evenly distributed throughout the dough.

  6. Cover and chill the dough for one hour.

  7.  Preheat your oven to 350°F  and line baking sheets with parchment paper.

  8. Roll out the dough 1/4 inch thick.  Use your favorite cookie cutters to cut out shapes, and place them about 1 inch apart on the prepared baking sheets.

  9. Bake cookies in the preheated oven for 10-12 minutes or until the edges are just beginning to turn golden.

  10. Make sure you let the cookies cool completely on a wire rack before decorating.
