Instant Pot Taco Egg Noodles are a quick and easy meal that combines the bold flavors of a taco with the comforting texture of egg noodles, all cooked conveniently in an Instant Pot.
These pressure-cooker taco egg noodles are the most leisurely and delicious one-pot meal! Cook your meal in your Instant Pot in minutes, and add your favorite taco toppings!
Why use egg noodles instead of another noodle shape?
There are a few reasons why egg noodles work fantastic for this meal!
1. Egg noodles absorb sauces and flavors more than regular pasta, which means they might soak up taco seasonings and the taste of the broth more than other pasta shapes.
2Egg Noodles cook super fast in the Instant Pot—only three minutes of cooking time are needed for this meal!
Ingredients:
1 lb ground beef (or ground turkey or chicken)
One packet of taco seasoning (or homemade taco seasoning) ( you can also make your taco seasoning using onion powder, garlic powder, cumin, chili powder, and oregano)
¼ cup of diced onion
Two cloves garlic, minced
2 cups beef broth or water
1 cup shredded cheddar cheese
½ cup sour cream
Salt and pepper to taste
Optional toppings: chopped cilantro, jalapeños, salsa, avocado, black beans, corn, green chilis, taco sauce, cheddar cheese, Monterey jack cheese, queso, or green onions.
Instructions:
- Set the Instant Pot to the “auté” function. Once iit’shot, add a little oil and the ground beef. Brown the meat for 5-7 minutes, breaking it into small pieces. Add diced onion and garlic, and sauté for another 2-3 minutes until the onions soften. Drain any excess fat if necessary.
- Season the Beef: Add the taco seasoning to the beef mixture and stir well to coat. At this point, you can also add salt and pepper.
- Pour diced tomatoes and beef broth (or water) into the can. Stir to combine everything. Add the egg noodles, making sure they’re submerged in the liquid.
- Pressure Cook: Close the Instant Pot lid and set the valve to the “sealing” along the” “position. Cook on Manual High Pressure for 3 minutes. Once the timer is up, perform a quick release by carefully moving the valve to “venting.”
- Once the pressure is fully released, open the lid and stir everything. Stir in the shredded cheddar cheese and sour cream until the mixture becomes creamy and cheesy. Add more beef broth or water to adjust the consistency if the dish seems too thick.
