These pineapple muffins are filled with fresh berries and are the perfect way to start your day! Your friends and family will gobble these muffins and beg you to make them again!

Ingredients
1 cup of all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup of sugar
1/3 cup of vegetable oil or melted butter
One teaspoon of vanilla extract
One egg
3/4 cup of crushed pineapple – DO NOT DRAIN JUICE
1 cup of fresh blueberries
Crumble Topping
One tablespoon of melted butter
Two tablespoons of all-purpose flour
Two tablespoons of brown sugar
Optional Add-Ins– coconut, chopped pecans, almonds, or other berries- would taste great in these muffins.

muffin liners, or silicone muffin cups

Instructions
1. Preheat the oven to 350 Degrees f
2. Mix dry ingredients in a mixing bowl: flour, baking powder, baking soda, and salt. Set aside.
3. Mix wet ingredients. Pineapple, oil, vanilla, egg, and pineapple in a second bowl.
4. Add dry ingredients to the wet ingredients and form a batter.
5. Fold in blueberries.
6. Fill each muffin tin 3/4 full with batter using a cookie scoop.
7. Mix the ingredients for the muffin toppings. Add 1-2 teaspoons of topping to each muffin.
8. Bake muffins in the oven for 20-25 minutes. The muffins should be golden brown, and a toothpick should come out clean before the muffins are done baking.
9. Let cook for 5 minutes before cooling.
Can I use frozen blueberries in this recipe?
Yes! frozen unsweetened blueberries will work with this recipe. Just do not thaw them. Add them right into your muffin batter.

Great recipe — just a tip, dust the blueberries lightly in flour before folding them into the muffin batter, this prevents them from sinking to the bottom of the muffin! 🙂 Enjoy! 🙂

In the ingredients 1/3 cup of sugar is listed….under the instructions it is not indicated anywhere where to put the sugar …with the dry ingredients? or with the wet so it dissolves….also the instruction “mix the wet ingredients” pineapple is listed twice…
