Pineapple Blueberry Muffins

Adding crushed pineapple to these blueberry muffins will add even more delicious flavor and give these muffins the perfect fluffy texture.  

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1/3 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 egg
  • 3/4 crushed pineapple Don't drain juice
  • 1 cup fresh blueberries

Crumble Topping

  • 1 tablespoon melted butter
  • 2 tablespoons flour
  • 2 tablespoons brown sugar

Instructions

  1. Preheat the oven to 350 Degrees f

  2. Mix dry ingredients in a mixing bowl.  Flour, baking powder, baking soda, and salt. Set aside

  3. Mix wet ingredients, pineapple, oil, vanilla, egg, and pineapple in a second bowl.  

  4. Add dry ingredients to the wet ingredients and form a batter.

  5. Fold in blueberries.

  6. Fill each muffin tin 3/4 full with batter using a cookie scoop.

  7. Mix the ingredients for the muffin toppings.  Add 1-2 teaspoons of topping to each muffin.

  8. Bake muffins in the oven for 20-25 minutes.  The muffins should be golden brown, and a toothpick should come out clean before the muffins are done baking.

  9. Let cool for 5 minutes before serving.
