These carrot cake donuts taste delicious!! The cake is moist, spongy, flavorful, and loaded with cream cheese frosting!
If you like carrot cake, you will love these homemade baked carrot cake donuts. This is an easy recipe you can make with your kids in just a few minutes and will make a delightful addition to your Easter brunch spread or any brunch at any time of the year! You only need a donut pan, muffin pan, and a few pantry ingredients to make these fluffy and cakey donuts!
Ingredients Needed
1 cup all-purpose flour
½ cup granulated sugar
⅓ cup brown sugar
One teaspoon of baking powder
One teaspoon of ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
Two eggs
⅓ cup milk
¼ cup butter, melted. you can also use vegetable oil
One teaspoon of vanilla extract
1 cup finely shredded carrots
Cream Cheese Frosting:
1 cup powdered sugar
4 ounces cream cheese, softened
One teaspoon of vanilla extract
Optional additional ingredients: shredded coconut, walnuts, raisins, or one teaspoon of ground ginger. For these donuts, you can also make a cream cheese frosting or a simple glaze.
Equipment
Doughnut pan or muffin pan
whisk or mixer
Large bowl or medium bowl
wire racks for cooling
I used a zester to shred the carrots finely, but if you like them thicker, you can use a regular cheese grater.
Instructions
- Preheat the oven to 350 degrees. Grease a donut pan with cooking spray or butter. Set aside. You can also use a muffin tin if you don’t have a donut pan.
- Combine dry ingredients. Flour, sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt in a medium mixing bowl. Set aside.
- Mix eggs, milk, butter, and vanilla in a large bowl.
- Mix the flour mixture slowly into the wet ingredients, including grated carrots, into your batter until just incorporated.
- Spray your donut or muffin tin with cooking spray. Fill each donut cavity ¾ of the way with batter. Bake for 8 -10 minutes. Move to a cooling rack and allow to cool.
- Stir together cream cheese and vanilla until smooth and creamy. Slowly add in powdered sugar. Frost donuts with cream cheese frosting once the donuts have cooled. Sprinkle with shredded coconut or chopped walnuts. And serve.
Can I make these without a donut pan?
Yes! You can make this recipe using a muffin tin! The donut won’t have a hole like a traditional donut, but they will still taste amazing!
