Strawberry White Chocolate Chip Cookies

These Strawberry White Chocolate Chip Cookies are perfectly chewy and packed with white chocolate chips and delicious freeze-dried strawberries!  Adding freeze-dried strawberries gives these an amazing strawberry flavor without compromising the chewiness of the cookie.  These are perfect for summertime! Once you try these, they are sure to become a family favorite!

After these Mango White Chocolate Chip Cookies turned out so good, I decided to make these with freeze-dried strawberries as well.  I have been loving cookies with fruit this season but adding fruit to cookies impacts the texture. Using freeze-dried fruit adds a delicious flavor to cookies without impacting the texture.

These cookies are festive for the patriotic summer holidays, and all of your strawberry-loving friends will love them!  I happen to be partial to white chocolate chips in cookies, but you can add regular chocolate chips as well.

I purchased freeze-dried strawberries at Walmart. I also see them at Aldi for a reasonable price.

How do you get your White Chocolate Macadamia nut to be chewy?

In my opinion, the most important thing to get right when making white chocolate macadamia nut cookies is that the cookies turn out chewy.   The most important step to follow to make the cookie chewy is to chill the dough.  You should chill the cookie dough for at least an hour.  But if you don’t have the time, at least chill the dough for 30 minutes at the very least.  

These Cookies call for mostly baking ingredients you already have in your pantry.  All you need is:

Butter

Pure Vanilla Extract

Brown Suger

White Sugar

1 egg

1 egg yolk

All-purpose Flour

Baking Soda

Salt

1.2-ounce bag of freeze-dried strawberries

  • You will want to make sure that you CRUSH the freeze-dried strawberries into smaller pieces.  Try crushing them while they are still in the bag.
  • I also think that these cookies would taste great with freeze-dried apples as well.

Ingredients

  • 1/2 cup butter at room temp
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon teaspoon salt
  • 1/2 cup white chocolate chips
  • 1 bag freeze dried strawberries crushed up a bit

Instructions

  1. Using an electric mixer, cream butter, white sugar, brown sugar, vanilla, egg, and egg yolk

  2. In a separate bowl, whisk flour, baking soda, and salt.

  3. Slowly add dry ingredients to the wet ingredients while mixing.

  4. Add crushed freeze-dried strawberries and white chocolate chips.

  5. Place cookie dough in a bowl and cover. Chill in the fridge for at least 1 hour.

  6. Preheat oven to 350 degrees.

  7. Line the baking sheet with parchment paper and place 1 inch balls of dough evenly on the baking sheet.

  8. Cook for 10 minutes.

  9. Remove from oven. Let cool and serve.

These cookies are amazing! I can’t wait to cook up another batch for the 4th of July!
