When my so-called “frugal husband” visits Costco, he always comes home with way more than what he intended. I’m serious. He, all of a sudden thinks that our kids need new clothes, finds random kitchen appliances and brings home WAY more produce than we can ever eat.
So, a few weeks ago,he drove out of the area for work, and stopped at Costco for dinner on the way home. ( the nearest Costco is an hour away) And like usual, brought home a TON of things. Including a bag of avocados, which I didn’t even see until about 5 days later when they were SUPER ripe.
I heart avocados with a passion. I notice that food bloggers are always adding avocados to recipes to make them even more incredible! – Kind of like how they add bacon to everything. ( I mean, I think bacon is OKAY) But I LOVE avocados!
I the day that I found these avocados in our fridge, I just happened to have my go to Chicken tacos simmering in the crock pot.
My “Go to” Crock Pot Chicken Tacos In a Crock pot add 1-2 lbs of boneless skinless chicken breasts 1 jar of your favorite salsa 1 can of beans ( black, kidney, pinto or whatever) frozen corn Put all these ingredients in the crock pot in the morning, and let simmer all day.
So I filled these avocados with taco filling and baked them in the oven at 350 for about 15 minutes. ( I also add cheese)
AND we ate this ” taco” using a spoon. This was so rich and delicious, I can’t even say. And of course, this is more of an idea for you to capitalize on. I am sure your favorite taco meat recipe would work in these too!

I’ve had BLt stuffed avacados and those are great. we are trying this for supper tonight.

What a fun and yummy use for avocados! I live in Florida and am lucky to be able to pick avocados off the trees all winter. Your dish is a definite must-try for me!
