Toffee Coconut Blondies

This toffee coconut blondie recipe is inspired by the one you can find at Disney’s Hollywood Studios. Coconut makes these blondies chewy, and it also pairs well with the flavor of the gooey toffee. This is the ultimate treat to make for dessert any time of the year!   

These Toffee Coconut Blondies are crispy on the outside and chewy on the inside. I came up with the idea when I read about different foods at Walt Disney World last spring. However, these don’t have any frosting like the ones at Hollywood Studios.   I love how coconut makes these blondies chewy and sweet. You will love the way the toffee pairs with the coconut.

Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 1/2 cups packed light brown sugar
  • One tablespoon of vanilla extract
  • Two large eggs
  • 2 cups all-purpose flour
  • One teaspoon of baking powder
  • 1 (8-ounce) package of toffee bits
  • 1 cup sweetened flaked coconut

Optional: 1 cup toasted chopped pecans

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13-inch baking pan.
  2. Cream the butter and brown sugar in a large bowl until light and fluffy. Beat in the eggs, then stir in the vanilla.
  3. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry and wet ingredients, mixing until just combined. Stir in the toffee bits, coconut, and pecans.

4. Pour the batter into the prepared d pan and bake for 30-35 minutes, until a toothpick inserted into the center comes clean. Let cool completely before cutting into bars.

These blondies taste buttery, and you will love the toasted coconut flavor in these bars! These are perfect for fall and any time of the year! These coconut blondies taste fantastic with a glass of cold milk or a piping hot cup of coffee.   These taste great, warmed up with a scoop of vanilla ice cream.

Recipe Tips

  • For a chewier blondie, add 1/2 cup of oats to the batter.
  • To make the blondies, bake them according to the directions and let them cool completely. Then, wrap them tightly in plastic wrap and freeze them for up to 2 months. When you’re ready to eat them, thaw them overnight in the refrigerator and then slice and serve.
  • Toffee blondies are also delicious with a scoop of vanilla ice cream.
