I had a few ripe bananas on my counter and decided to do something a little different than my usual banana bread. These Pistachio Banana Muffins with Pistachio Oatmeal Crumble turned out perfectly soft, sweet, and nutty. The pistachios add a delicate crunch, and the oatmeal crumble gives each muffin a cozy bakery feel. They are the kind of muffins that make your kitchen smell amazing and are perfect for breakfast, snacks, or packing in lunches.

Ingredients

For the muffins:

3 ripe bananas, mashed

½ cup melted butter or olive oil

¾ cup brown sugar

1 large egg

1 teaspoon vanilla extract

1/2  teaspoon baking soda

1/2 teaspoon baking soda

½ teaspoon salt

1½ cups all-purpose flour

½ cup chopped pistachios

For the pistachio oatmeal crumble:

¼ cup brown sugar

¼ cup flour

¼ cup rolled oats

2 tablespoons melted butter

2 tablespoons chopped pistachios

Equipment

12-cup muffin tin

Paper muffin liners or nonstick spray

Large mixing bowl

Medium bowl for crumble topping

Fork or potato masher for bananas

Whisk

Rubber spatula or wooden spoon

Measuring cups and spoons

Wire cooling rack

Instructions

Preheat the oven to 350°F. Line or grease a 12-cup muffin tin.

In a large bowl, mash the bananas until smooth. Whisk in the melted butter, brown sugar, egg, and vanilla until well combined.

Combine the dry ingredients: flour, baking soda, baking powder, and salt.  Stir just until the batter comes together. Fold in the chopped pistachios.

Divide the batter evenly among the muffin cups.

In a small bowl, combine the brown sugar, flour, oats, melted butter, and pistachios to make the pistachio oatmeal crumble. Sprinkle the crumble evenly over each muffin.

Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.

Allow the muffins to cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.

Storage

Store at room temperature: Store in an airtight container for up to three days. You can also store it in the refrigerator: Keep in a sealed container for up to six days. Or you can store it in the freezer.  Wrap each muffin individually and freeze for up to two months. Thaw at room temperature or warm briefly in the microwave before serving.

  • 2 tbsp melted butter
  • 1/4 cup chopped pistachios

Instructions
