Pistachio Banana Muffins

These Pistachio Banana Muffins with Pistachio Oatmeal Crumble are soft, nutty, and full of banana flavor. A bakery-style muffin that feels special but is easy enough to make any day of the week.

Ingredients

  • 3 ripe bananas mashed
  • 1/2 cup melted butter- cooled
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup sour cream
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1.5 cups all-purpose flour
  • 1/2 teaspoon salt

Pistachio Oatmeal Crumble

  • 1/4 cup brown sugar
  • 1/4 cup oatmeal
  • 1/4 cup all-purpose flour
  • 2 tbsp melted butter
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat the oven to 350°F. Line or grease a 12-cup muffin tin.

  2. In a large bowl, mash the bananas until smooth. Whisk in the melted butter, brown sugar, egg, and vanilla until well combined.

  3. Mix together the dry ingredients: flour, salt, baking soda, and baking powder.  Stir just until the batter comes together. Fold in the chopped pistachios.

  4. Divide the batter evenly among the muffin cups.

  5. In a small bowl, combine the brown sugar, flour, oats, melted butter, and pistachios to make the pistachio oatmeal crumble. Sprinkle the crumble evenly over each muffin.

  6. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.

  7. Let cool before transfering the muffins to a cooling rack.
