Aquafaba Chocolate Chip Cookies

Aquafaba is an egg substitute made from the water from a can of chickpeas. This aquafaba chocolate chip cookie recipe will turn out crisp on the outside and chewy on the inside. It’s a slight umami flavor, makes it my favorite egg replacement in cookies!

What is Aquafaba? 

Aquafaba is the liquid from canned chickpeas or chickpea brine. It has a protein and starch content similar to egg whites, making it a great egg replacement in baking and cooking. For egg replacement, use about three tablespoons per egg in baking.

Ingredients

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup packed brown sugar

1 teaspoon vanilla extract

3 tablespoons aquafaba, which is the liquid from chickpeas or garbanzo beans.

1.25 cups all-purpose flour

1/4 teaspoon baking powder

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

To make dairy free vegan chocolate chip cookies, you can replace the butter with vegan butter, like Earth Balance, or use coconut oil.  You must also use vegan chocolate chips instead of regular chocolate chips.

Optional add-ins: You can add ingredients to these cookies, such as raisins, craisins, chocolate chunks, almonds, and other nuts.

Instructions 

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper or lightly grease it.

  2. Cream butter and sugars: In a large mixing bowl, beat ½ cups softened butter, ½ cups sugar, and ¼ cups brown sugar until light and fluffy.

  3.  Stir in 1 teaspoon vanilla and the aquafaba.

  4.  Whisk together 1.25 cups flour½ teaspoon baking soda, and ½ teaspoon salt in a separate bowl.

  5. Gradually add the dry ingredients and wet ingredients, stirring until combined.

  6. Fold chocolate chips into the mixture: Gently mix in 1 cup of chocolate chips.

  7. Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

  8. Bake for 10-12 minutes or until the edges are lightly golden.

  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Storage: These cookies can be stored at room temperature in an airtight container for up to five days or in the freezer.

What should I do with my leftover Aquafaba?

1) It lasts about 5–7 days in the fridge in an airtight container

2) You can freeze it in an ice cube tray and thaw it when ready to use it again.
