Flax Seed Egg Chocolate Chip Cookies

Making a flax seed egg adds a nutty flavor to cookies and works excellently if you don’t have eggs in the house!

Making a flaxseed egg is super easy! Flaxseed chocolate chip cookies are soft and chewy and packed with rich, gooey chocolate, offering a delicious egg-free alternative with a subtle nutty flavor.

How to make a flax seed egg

  1. Mix one tablespoon of ground flaxseed with three tablespoons of warm water in a small bowl.
  2. Let it sit for about 5 minutes until it thickens and becomes gel-like.

Flax seed eggs also work great as a binder for muffins, cakes, breads, pancakes, and waffles. They can also be used in savory recipes such as meatballs or meatloaf.

Ingredients

  • 1/2 cup butter softened
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 tbsp ground flax seeds or flax seed meal
  • 3 tbsp water
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°FLine a baking sheet with parchment paper or lightly grease it.
  2. To make the flax seed egg, mix one tablespoon of ground flax seeds with three tablespoons of water in a small bowl. Let it sit for about five minutes until it forms a gel-like consistency.
  3. Cream butter and sugars: In a large mixing bowl, beat ½ cups softened butter½ cups sugar, and ¼ cups brown sugar until light and fluffy.
  4. Add wet ingredients: Stir in 1 teaspoon vanilla and the flax egg until well combined.
  5. Combine dry ingredientsIn a separate bowl, whisk together 1 cup flour½ teaspoon baking soda, and ½ teaspoon salt.
  6. Mix everything: Gradually add the flour mixture and wet ingredients, stirring until combined.
  7. Fold chocolate chips into the mixture: Gently mix in 1 cup of chocolate chips.
  8. With a cookie scoop, drop spoonfuls of cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Recipe Note: You can make these cookies dairy-free or vegan chocolate chip cookies using vegan butter or coconut oil.

You can add more than just chocolate chips! Add almonds, walnuts, coconut, pecans, dark chocolate chips, or anything else to your chocolate chip cookies!
