Ingredients needed:

1.5 cups all-purpose flour

1/2 tsp baking soda

½ teaspoon baking powder

½ tsp salt

½ cup  unsalted butter, softened

⅓ cup granulated sugar

½ cup packed light brown sugar

One large egg

1 tsp orange extract. You can also use orange oil from the candy-making aisle.

½ teaspoon vanilla extract

1 tbsp orange zest (about one large orange)

1/2 cup dried cranberries

1/2 cup white chocolate chips

Optional ingredients/substitutions, such as fresh cranberries and white chocolate chunks instead of white chocolate chips, would taste delicious in this recipe!

Equipment needed:

Stand Mixer or Electric mixer

spatula

wire rack for cooling

mixing bowl

cookie scoop

parchment paper or silicone mat

baking sheets

Instructions

Makes 20 cookies

  1. Preheat oven to 350°F, and line two baking sheets with parchment paper or silicone baking mats.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3.  In a large mixing bowl, Stir the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg, extract, and zest: Beat in the egg, orange extract, and zest until well combined.
  5. Gradually mix the flour mixture into the wet ingredients until just combined. If the dough feels dry or crumbly, add 1 tbsp of milk to bring it together.
  6. Gently fold the dried and white chocolate chips, ensuring they’re evenly distributed.
  7. Using a cookie scoop or tablespoon, scoop rounded balls of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake: Bake for 10-12 minutes until the edges are lightly golden, but the centers still look soft. Be careful not to overbake, as this helps them stay chewy.

Cool: Allow the cookies to cool on the baking sheets for about 5 minutes, then transfer them to a wire rack to cool completely.
