Caramel Apple Breakfast Cookies

A few weeks ago, I shared with you how I served my toddler Healthy Ice Cream for breakfast. 

 Well, this weekend he got cookies for breakfast.   You should have seen how excited he got when my husband warmed up these healthy cookies and served them for breakfast.

 These cookies are filled with Healthy ingredients, and contain NO SUGAR!  These cookies are sweetened with dates and apples.  Dates taste exactly like caramel, they make a wonderful sweetening agent for these cookies.

I stored these cookies in my pyrex and heated them up in the microwave for about 10-15 seconds when it was time to eat them.  In addition to the dates and apples, I also added chopped almonds.

Caramel-Apple Breakfast Cookies Ingredients:   1 Cup of Olive Oil, 3 eggs, 2 cups of flour, 1 teaspoon baking soda, 1/2 teaspoon cinnamon, 2 teaspoons of water, 1 cup of chopped almonds, 1 cup of shredded apples, 2 cups of dates. 

Place dates in a bowl of water for 30 minutes In a large bowl, cream together oil, dates, water, eggs and shredded apple.   slowly add flour and baking soda and almonds. Using a cookie scoop, make 1 inch balls on a cookie sheet.  Bake cookies at 375 for 17 minutes. 

I used regular flour.  It is possible to use another kind of flour.  Almond, Coconut, Etc.  See a conversion chart.

I love challenging myself to come up with recipes that contain no sugar.  Paleo diets, vegan diets or whatever you follow, I think we can all agree that sugar is something that should be reduced in our diets. bcookies3
