This french toast bake uses day old buns and leftover fruit salad from the night before and transforms them into a warm breakfast everyone will love. The soft bread pieces soak up the egg mixture while the natural sweetness from different fruits like strawberries, apples, blueberries, raspberries, and even peaches brings bright flavors to the dish. It is an easy way to use what you already have in the fridge and create something that feels fresh and thoughtful.

One important step is to drain the fruit salad well before adding it to the pan. Extra liquid from the juices can make the casserole too soft instead of perfectly custardy. Letting the fruit sit or gently patting it dry helps keep the texture balanced while still allowing all the flavors to come through.

Ingredients

  1. Brioche buns or old bread cut into bread pieces
  2. Fruit salad with strawberries, grapes, kiwi, mandarin oranges, pineapple blueberries, apples, raspberries, blackberries, or peaches. – your favorite fruit salad ingredients will work great! 
  3. Large eggs
  4. Milk- you can choose to use half and half or heavy cream for a richer casserole. 
  5. Granulated sugar 
  6. Brown sugar
  7. Vanilla
  8. Cinnamon 
  9. Nutmeg
  10. Salt
  11. Butter

Equipment

  1. 9×13 baking dish
  2. Cooking spray
  3. Large bowl
  4. Medium bowl
  5. Small bowl
  6. Whisk
  7. Knife and cutting board

Instructions

  1. Preheat oven to 350 degrees and coat a baking dish with cooking spray.
  2. Add the bread pieces to the pan and stir in the drained fruit to create an even layer.
  3. In a medium bowl whisk together the eggs, milk, sugar, vanilla, cinnamon, nutmeg, and salt to form the batter.
  4. Pour the egg mixture evenly over the bread and fruit, making sure everything is coated in the liquid.
  5. Let the casserole sit at room temperature for about 15 minutes so the bread absorbs the juices.
  6. Drizzle melted butter over the top of the casserole and sprinkle lightly with brown sugar if desired.
  7. Bake for 35 to 40 minutes until the center is set and the top of the casserole is lightly golden.

Storage

Cover leftovers with plastic wrap or place in an airtight container and store in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.

Fruit Salad French Toast Bake 

  • 6 to 8 brioche buns, cut into bite sized bread pieces
  • 3 cups fruit salad, well drained, including strawberries, blueberries, apples, grapes, raspberries, blackberries, or peaches
  • 6 large eggs
  • 1 ½ cups milk
  • ⅓ cup granulated sugar
  • ¼ cup brown sugar, plus extra to sprinkle on top
  • 1 tablespoon vanilla
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons butter, melted
    1. Cut brioche buns or french bread into bite sized bread pieces and place into a greased baking dish.
    2. Add drained fruit salad including strawberries, blueberries, apples, raspberries, blackberries, or peaches and stir gently to combine in an even layer.
    3. In a large bowl whisk together large eggs, milk, granulated sugar, brown sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
    4. Pour the egg mixture evenly over the bread and fruit, making sure all pieces are coated with the liquid.
    5. Let the mixture sit at room temperature for 15 minutes.
    6. Drizzle melted butter over the top of the casserole and sprinkle with additional brown sugar if desired.
    7. Bake in a preheated oven at 350 degrees for 35 to 40 minutes until the center is set.
    8. Remove from the pan, let cool slightly, slice, and serve warm.
