Copycat Whole Foods Chewy Oatmeal Cranberry Cookies

You will love the chewy texture of these copycat Whole Foods oatmeal cranberry cookies! 

During my adult life, I have never lived in a place with a Whole Foods. When I visit my parents in Chicago, I like to visit Whole Foods for their delicious ( although costly) salad bar. I always pick up a few packages of their chewy oatmeal cranberry cookies!  I have attempted to recreate this recipe for years because these cookies have been my favorite.

These cranberry oatmeal cookies are the perfect combination of chewy, sweet, and hearty. Your house will smell amazing when you pull them out of the oven, and they taste delicious dunked in a cold glass of milk!

Ingredients

1/2 cup (1 stick) unsalted butter, softened

1/2 cup light brown sugar, packed

1/4 cup granulated sugar

One large egg

1 tsp vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

One teaspoon cinnamon

1.5 cups old-fashioned rolled oats

3,4 cups dried cranberries, or you can use raisins

Optional Ingredients: You can create variations of this chewy oatmeal cranberry cookie recipe. This recipe would make white chocolate chips, pecans, walnuts, dark chocolate chips, and your favorite protein powder taste delicious.

Ingredients Note: This recipe requires rolled oats. Instant Oats and steel-cut oats will not work.

Equipment

Baking Sheets 

Mixing bowl

Parchment Paper or a silicone baking mat

Wire rack for cooling

The mixer can be a handheld electric or stand mixer with a paddle attachment.

Instructions:

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until creamy and smooth (about 2-3 minutes).
  3.  Beat in the egg, then mix in the vanilla extract until combined.
  4. Combine the dry ingredients to make the flour mixture. Whisk the flour, baking soda, salt, and ground cinnamon in a separate bowl.
  5. Slowly add the dry ingredients to the wet mixture and stir until combined. Be careful not to overmix.
  6.  Fold in the oats, raisins, and other add-ins using a spatula.
  7.  Using a cookie scoop or tablespoon, drop cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten each dough ball with your hand.
  8. Bake for 10-12 minutes until the edges are golden brown, but the centers are still soft. Be careful not to overbake, as this ensures a chewy texture.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Storage: The cookies can be stored in an airtight container at room temperature for up to three days or in a freezer bag; they freeze well.
