Greek Chicken Salad

You will love this flavorful, bright, and crunchy Greek-inspired chicken salad! This recipe is super easy to make and makes a delicious lunch or dinner when its hot outside!

Ingredients

  • 2 cups cooked chicken breast
  • 1/2 cup mayonnaise
  • 1/2 cup Greek Yogurt
  • 1 tbsp kalamata olive brine
  • salt and pepper to taste
  • 1-2 tbsp fresh or dried dill
  • 1/4 cup chopped kalamata olives
  • 1/2 cup chopped cucumber
  • 1/2 cup halved tomatoes
  • 1/4 cup crumbled feta cheese

Instructions

  1. Combine the mayonnaise, Greek yogurt, and kalamata olive brine in a large bowl. Whisk until smooth.

  2. Add the shredded chicken, red onion, cucumber, cherry tomatoes, kalamata olives, feta cheese, and dill. Gently toss to combine.

  3. Season with salt and freshly ground black pepper to taste. (You may want to go lighter on the salt first, as the feta and olive brine already contribute some.

  4. Cover the bowl and refrigerate for at least 30 minutes or overnight to allow the flavors to marinate.
