Instant Pot Hot Pulled Pork Sundaes

Last year, I posted  These Instant Pot Hot Beef Sundaes, which is a copycat recipe from the Iowa State Fair.  They were such a hit with my family and the whole dish cooked together in one pot!  I mean, who doesn’t love the ultimate bowl of comfort food?

Since I probably cook pork more often than beef, I decided to try Hot Pulled Pork Sundaes as well.   I made this recipe on a hot day when I was running back and forth from my kitchen and the front yard, where I was watching my kids play.  The best part was that both the potatoes and the pork cooked at the same time, and I was able to throw dinner together quickly and in one pan!

In the last few months, I have made a lot of pulled pork in my Instant Pot.  I often reach for what I have around the house for pulled pork seasonings.  Although I am pretty sure every person in Iowa has their ” perfect pulled pork” recipe.

I have decided that my perfect pulled pork contains:

1 Onion

One small,  7.5 ounces can of coke

Two tablespoons of Trader Joe’s Coffee Barbecue Rub or any other barbecue rub you happen to have around.

Then all you need to compete these pulled pork Sundaes are:

potatoes,

butter and salt

sour cream

chives

cheese

a tomato

or anything else you might like on your sundae!

You will need an Instant Pot and a Vegetable Steamer Basket to make this recipe.

You will place your pork, onions, and liquid on the bottom of your Instant Pot.  Then you will set your steamer basket and potatoes on top. Easy Peasy!

 

Hot Pulled Pork Sundaes

Ingredients

Pulled Pork

  • 1-2 pound pork loin roast
  • 1 7.5 ounce can coke
  • 1 small onion sliced
  • 2 tablespoons Your favorite BBQ Rub

Pulled Pork Sundaes

  • 1-2 pounds small red potatoes
  • salt and butter to taste
  • shredded cheese
  • sour cream
  • chives
  • tomatoes

Instructions

  1. On the bottom of your Instant Pot, place pork, onions, bbq rub, and the coke.

  2. Place your steamer basket on top of the pork.

  3. Place your washed, cut potatoes in the steamer basket.

  4. Close your Instant Pot. Secure lid.

  5. Cook on high pressure for 30 minutes.

  6. Let out pressure right after the cooking process is done.

  7. Your potatoes should mash at the touch of a spoon. Place them in a bowl with butter and salt to taste.

  8. Pull apart pork with a fork, and saute in the juices for 5-10 minutes.

  9. Build your Sundae. Place a spoonful of mashed potatoes in a bowl. Spoon some pulled pork on top. Top with cheese, sour cream, chives, and any other toppings you desire.
