Instant Pot- Pot Sticker Filling

This low carb pot sticker option is the recipe you didn’t know you needed! This filling is made in your Instant Pot and can be made, gluten-free keto and whole 30 approved if you use either Tamari sauce or Coconut Aminos in place of soy sauce.  These taste amazing, and are so comforting! 

This past summer, I did a round of Whole 30, and although I am not on it anymore, I still have cut way back on starches, and I have majorly increased my fruit and vegetable intake.  One food that I was craving the other week were potstickers.  I decided to try to make just potsticker filling and forgo the wonton wrapper.  I wasn’t sure how this would turn out, because I love those squishy dumplings.

I made this delectable Pot Sticker Filling in my Instant Pot.  It worked out well, and it turned out very moist.  It was full of flavor and fit the bill for a low carb pot sticker option.  Instead of just eating the potsticker filling plain, I added them to a lettuce wrap.

What you need for Instant Pot- Pot Sticker Filling

  1. Ground pork or ground turkey.
  2. Shredded cabbage, I actually used coleslaw mix
  3. Ground ginger 
  4. Sesame Oil
  5. Rice Wine Vinegar
  6. Hoisin Sauce
  7. Garlic- I love this freeze-dried garlic
  8. Oh yeah, and an Instant Pot, but if you don’t have one, you can make this on the stovetop too.

In my opinion, you can’t add too many green onions.  I think that the best potstickers have a lot few extra green onions.  I also think you should be generous with ginger.  This cooks up in just a few minutes and tastes best when dipped in Soy Sauce.  Or Tamari for you gluten-free folks.  Or Coconut Aminos for you Whole 30 folks 🙂

This recipe is really easy and comes together really well.

Instant Pot-Pot Sticker Filling

Ingredients

  • 1 pound ground pork or ground turkey
  • 1 cup cole slaw mix
  • 3 green onions, chopped
  • 1 tablespoon hoisin
  • 1 teaspoon ground ginger
  • 2 tablespoons sesame oil
  • 1 teaspoon sriracha optional

Instructions

  1. Set your Instant Pot to the Saute setting. 

  2. Pour sesame oil on the bottom of your Instant Pot 

  3. Place Ground Pork, cabbage, garlic, green onions, hoisin, ginger, and sriracha in your Instant Pot and mix together while sauteing slightly. 

  4. Don't worry about cooking the meat all the way through that is what the pressure cooking process is for.  Once everything is mixed up, close your Instant Pot lid and cook on high pressure for 8 minutes. 

  5. Release pressure right after the cooking process is finished.  Remove lid. 

  6. Saute to thicken the mixture. 

  7. Top with soy sauce and enjoy within a lettuce wrap! 

This was super delicious!  I also think it would taste great on a chinese salad, served with stir fry vegetables, or over noodles.  Your co-workers will be wildly jealous when you show up with this pot sticker filling for lunch!
