This creamy Rotisserie Chicken Buffalo Dip is an easy game-day favorite made in 15 minutes, all in one saucepan.
I don’t know why I waited so long to try making buffalo chicken dip on the stovetop, but now I don’t think I’ll go back. Every other recipe had me turning on the oven, waiting for everything to bake, or waiting for a slow cooker.Ā This version comes together in one saucepan, takes about 15-20 minutes, and tastes just as good.
I also wanted something a little lighter without giving up that rich, creamy flavor. Instead of using a whole block of cream cheese, I swapped 1/2 the cream cheese forĀ Greek yogurt. It still has that classic buffalo chicken dip taste, but with a little extra protein. Honestly, if I hadn’t made it myself, I don’t think I would have known the difference.
Using a Rotisserie Chicken makes this even easier. Mine was mostly shredded chicken breast with a little dark meat mixed in because that’s what was left.Ā Whether you’re making it for football season, a family movie night, or a last-minute party appetizer, this is one of those buffalo chicken dip recipes everyone seems to gather around. Just set out a bowl of tortilla chips, celery sticks, carrot sticks, or baguette slices and watch them disappear.
Ingredients
Cream cheese
Plain Greek yogurt
Homemade ranch dressing or store-bought
Buffalo wing sauce
Shredded Rotisserie Chicken (mostly chicken breast with a little dark meat)
Shredded cheddar cheese
Optional toppings: sliced green onion, blue cheese crumbles, mozzarella cheese, a sprinkle of garlic powder or red pepper flakes
Instructions
- Add the cream cheese, Greek yogurt, ranch dressing, and buffalo wing sauce to a medium saucepan over medium-low heat. Stir until the cream cheese has completely melted and everything is smooth.
- Combine the chicken with the sauce and continue stirring until heated through.
- Taste and add a sprinkle of garlic powder or red pepper flakes for a little more flavor.
- Add cheddar cheese and melt
- Serve warm with tortilla chips, celery sticks, carrot sticks, or sliced baguette. If you’d like, top with green onion, mozzarella cheese, or blue cheese before serving.
If you prefer a baked version, transfer everything to a baking dish, sprinkle with mozzarella cheese, and bake in a 350-degree oven until hot and bubbly.
A few tips
Rotisserie Chicken is my favorite shortcut, but any pre-cooked chicken works.
If your cream cheese is cold, cut it into cubes so it melts more quickly.
Love extra heat? Add another splash of hot sauce or homemade buffalo sauce.
This recipe doubles easily for a larger crowd.
