If you shop at Trader Joe’s, you may love their mini sheet cakes like mine. I have tried the vanilla, lemon, carrot cake, and lemon. This is the perfect spot for a small group to purchase dessert. I don’t live near Trader Joe’s, so I must make my own when craving a slice of Trader Joe’s pumpkin spice mini sheet cake.
How do you find the tiny sheet pan that this recipe is sold in? I found 5 X7 sheet pans at the Dollar Tree. This recipe will either make two 5X7 mini sheet cakes or make this cake in an 8X8 pan, but the cake slices will be thicker.
This sheet cake is super moist and has the perfect pumpkin spice! One distinct flavor I taste in this cake is ginger; make sure you don’t skimp on it!
Ingredients
1½ cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
2 tsp pumpkin pie spice (or mix: 1 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp cloves)
1 1/2 teaspoon of ground ginger
½ cup unsalted butter melted and slightly cooled
1 cup pumpkin puree (not pumpkin pie filling)
1/2 cup brown sugar, packed
½ cup granulated sugar
Two large eggs
1 tsp vanilla extract
¼ cup milk
For the Cream Cheese Frosting:
8 oz cream cheese, softened
4 tbsp unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
A pinch of salt
You can use store-bought frosting for this recipe, there is no shame and your cake will still turn out delicious!
Instructions
1. Preheat your oven to 350°F. Grease and line an 8×8-inch baking dish, quarter sheet pan, or 2 7X5 store-bought foil pans.
2. mix the flour, baking powder, baking soda, salt, and pumpkin pie spice in a medium bowl. Set aside.
3. In a large bowl, whisk together the melted butter, pumpkin puree, brown sugar, granulated sugar, eggs, vanilla extract, and milk until smooth.
4. Gradually add the dry ingredients to the wet ingredients, mixing until combined. Be careful not to overmix.
5. Pour the batter into the prepared baking dish and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes clean. Allow the cake to cool completely before frosting.
6. Make the Cream Cheese Frosting. Beat the softened cream cheese and butter in a large bowl until creamy and smooth. Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Beat until the frosting is fluffy and soft.
7. Frost the Cake. Once the cake is completely cool, spread a generous layer of cream cheese frosting. For a classic Trader Joe’s look, you can spread the frosting smoothly or add little swirls for texture.
