Trader Joe's Mini Pumpkin Spice Sheet Cake

The Mini pumpkin spice sheet cake from Trader Joe's is a seasonal favorite that typically appears at Trader Joe's stores during the fall season. Now, you can make this at home all year round, even if you don't live near Trader Joe's! 

Ingredients

  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1 tsp ground ginger
  • 1/2 cup melted butter slightly cooled
  • 1 cup pumpkin pie filling
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk

Cream Cheese Frosting

  • 8 ounces cream cheese softened
  • 4 tbsp unsalted butter
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F. Grease and line an 8x8-inch baking dish, quarter sheet pan, or 2 7X5 store-bought foil pans.

  2. Mix the flour, baking powder, baking soda, salt, and pumpkin pie spice in a medium bowl. Set aside.

  3. In a large bowl, whisk together the melted butter, pumpkin puree, brown sugar, granulated sugar, eggs, vanilla extract, and milk until smooth.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined. Be careful not to overmix.

  5. Pour the batter into the prepared baking dish and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes clean. Allow the cake to cool completely before frosting.

  6. Make the Cream Cheese Frosting.  Beat the softened cream cheese and butter in a large bowl until creamy and smooth. Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Beat until the frosting is fluffy and soft.

  7. Frost the Cake. Once the cake is completely cool, spread a generous layer of cream cheese frosting. For a classic Trader Joe's look, you can spread the frosting smoothly or add little swirls for texture.

  8. Slice and Serve:
