Strawberry Kiwi Spinach Poppyseed Salad

When strawberries are in season, I like to add them to every recipe possible. This Strawberry kiwi spinach poppyseed salad will be a massive hit with the whole family! This salad features spicy onions, fresh strawberries and spinach, tangy kiwi, and goat cheese, all topped with a homemade lemon poppyseed dressing and lemon zest. Your friends and family will swoon over this salad when you bring it to your next get-together!

This spinach salad is delicious and can be eaten as a side dish or a main meal.   You can make this recipe your own by adding more of your favorite fruit! Blueberries, raspberries, or mandarin oranges would also make fabulous additions to this salad.   You can choose to purchase your favorite sweet lemon poppyseed salad dressing, or you can make your own if you have poppy seeds handy. Strawberry spinach salad is one of my all-time favorite salad recipes. You will love the way it tastes!

Ingredients

Fresh Spinach

Strawberries, sliced

kiwifruit slices

craisins

goat cheese

red onion

pepitas – You can also choose to add sunflower seeds, pecans, almonds, pistachios, or another kind of nut for some crunch.  

Lemon poppy seed dressing ingredients

lemon zest

Optional Ingredients: Grilled chicken, additional berries,

If you don’t want to spend the time to make homemade poppyseed dressing, store-bought will do just fine.

Lemon Poppyseed Salad Dressing

1/3 cup of white sugar

1/2 cup lemon juice

One teaspoon of dijon mustard

1/2 teaspoon salt

1/2 cup canola oil

One tablespoon of poppyseeds

Instructions

1. Prepare ingredients. Wash and slice strawberries, slice onions,  peel, and slice kiwi. Make Lemon poppyseed dressing if you are making homemade.

2. Place spinach in a large salad bowl and arrange toppings on top of the salad: fruit, onions, pepitas, cheese, and craisins.

3. Toss salad ingredients together.

4. Drizzle 2-3 ounces of Lemon poppyseed dressing on top and mix some more.

5. Top off the salad with lemon zest.

6. Serve in a large serving bowl.

Storage:  Store in an airtight container for up to two days in the fridge.

  • 1/2 small red onion sliced
  • 1 quart strawberries
  • 6 kiwifruit peeled and sliced
  • 1/4 cup craisins
  • 1/4 cup pepitas
  • 1/4 cup soft goat cheese
  • lemon zest

Poppyseed Dressing

  • 1/3 cup white sugar
  • 1/2 cup lemon juice
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/2 cup canola oil
  • 1 tablespoon poppyseeds

We love eating strawberries by the pint all summer. Strawberries are sweet, delicious, and filled with vitamins such as vitamin c—no need to worry about the calories or the number of carbohydrates in this salad. There are so many healthy ingredients in this meal!
