Can I use Fresh Mint Instead of Extract?
Yes. You will want to use 12-15 mint leaves. Make sure to chop them up and cream them with butter and cream cheese to extract the mint flavor.
Instructions
- Mix the dry ingredients in a bowl—flour, baking powder, salt and set aside.
- Use an electric mixer to cream together, cream cheese and butter. Followed by the sugar and mint extract.
- Add Egg and to the mixture and mix well. Make sure to keep scraping the sides of the bowl to make sure everything gets mixed.
- Add the dry ingredients and mix well.
- Chill cookie dough for at least an hour.
- Preheat oven to 350 degrees
- Use a cookie scoop to scoop out balls of dough and place them on a lined baking sheet. The dough will be sticky. You may want to roll them into balls, but you don’t have to.
- Bake for 10-12 minutes. Or until you see the edges start to turn a golden color.
- Remove from oven and let cool before serving.
You can get creative with the flavors in these Cream cheese cookies. Lemon extract, Almond extract, or Vanilla extract would also taste great in these cookies. These cookies have a similar taste to cream cheese butter mints or baby shower mints. You could always make these with pastel colors if you want them to resemble the cream cheese mints.
