Baked Cod with Feta and Blistered Tomatoes

Fish really makes a fast and easy dinner idea.  Cod cooks up super fast in the oven and can be a blank slate for adding your favorite flavors.  You can use fresh or frozen cod in this recipe.  I love how creamy and tangy feta cheese tastes when it is baked, and it tastes great with the juicy and roasty blistered tomatoes.  This is an effortless meal with a super short ingredient list.  I recommend adding your favorite olives and herbs to fit your pallet. 

Lent is just around the corner, and I plan to add some new seafood recipes to my dinner repertoire.  When I saw all those feta tomato pasta recipes show up online, It reminded me that I have meant to add those flavors to a simple piece of fish.

This recipe has a five minute prep time and cooks up in just 10-12 minutes.

Cod has a very mild flavor and always turns out juicy and moist.  This is a super easy recipe. However, please do not overcook the fish.  You can always pop the fish back in the oven to cook it a bit longer if you have to.

How do you defrost frozen cod?-  Most of the time, frozen fish portions come in sealed plastic bags and are flash-frozen while still super fresh.  Frozen fish thaws super fast.  All you need to do is place the fish, even in the plastic, in lukewarm water until it softens.  -About 15 minutes.

If you are using frozen Cod, make sure you pat them dry after you defrost them. 

All you need for this recipe is:

A baking sheet

Parchment paper- for a quick clean up

4 Cod fillets

olive oil

garlic

1 container of grape tomatoes

1/2 cup of crumbled feta cheese

Garnishes:  Olives, spinach, or fresh herbs such as dill would make a great accompaniment to this fish.

The perfect temperature for cooking cod is 400 degrees for 10-12 minutes. 

Cod is high in lean protein and very low in fat.  Cod has other health benefits, such as promoting heart wellness and brain functioning.

Ingredients

  • 4 8 ounce cod fillet
  • 1 tablespoon olive oil
  • 1 teaspoon garlic
  • 1 dash sea salt
  • 1 pint grape or cherry tomatoes
  • 1/2 cup crumbled feta cheese

Garnishes

  • kalamata olives optional
  • l spinach optional
  • fresh dill optional

Instructions

  1. Preheat the oven to 400 degrees

  2. Line a baking sheet with parchment paper

  3. Arrange the cod fillets on the baking sheet. sprinkle cod with sea salt, garlic, tomatoes, and feta cheese.

  4. Bake in the oven for 10-12 minutes. Keep your eye on the fish as to avoid overcooking the fish.

  5. Remove fish from the oven. Garnish and serve while it is still warm. The tomatoes should be juicy and bursting. The feta should be soft and creamy.
