As busy as I get during the school year, these summer days tend to fly by even faster. My three sons keep me busy. Very, very busy. My boys are extremely active during this time of year, which has caused them to be particularly hungry. Burgers of any variety are the easiest and best dinner I can make my family because they are so quick to make, they don’t heat the house, and my kids never have a problem eating them.
Always I wouldn’t say I like to heat my grill because my sons usually play outside, and I don’t want them to go near it. I love using my countertop Griddler for cooking burgers fast, but I thought I would attempt a burger recipe in my pressure cooker since that is my new fascination.
Okay, let’s get back to this fantastic burger. Like I said above, I made These burgers are made my pressure cooker. There were no grill marks on these burgers, but these burgers tasted outstanding. They were so moist and flavorful that I could barely believe it. These took less than 30 minutes to prepare from start to finish. I cooked them in foil packets, and I made a video for you to see how I did it.
Chicken Salsa Burgers
Ingredients
1 pound ground chicken
1/2 cup your favorite salsa
1 teaspoon onion powder
1/8 cup chopped cilantro
1/4 cup frozen corn
Pepperidge Farm® Hamburger Buns
toppings
tomato slices
avocado
queso fresco cheese
Instructions:
In a bowl, mix ground chicken with cilantro, onion powder, corn, and salsa. Form patties with the mixture and place them on 6 by 8-inch pieces of tinfoil
Create individual foil packets around each burger
Place 1.5 cups of water in the pot within your pressure cooker
Place the trivet on top of the water
place all 4 foil packets on top of the trivet and place the lid on your pressure cooker
Cook on high pressure for 15 minutes
Remove lid. Take burgers out of the foil packets and build your burger!
Place each burger on a Pepperidge Farm® Hamburger Bun and top with a tomato slice, avocado slices, and queso fresco cheese.
This burger was outstanding. My husband, who usually isn’t too excited about non-beef burgers, enjoyed it and wanted another one. Everything here actually went together well. The sweet corn inside the chicken burger, the creamy avocado, the salty cheese, and the perfectly soft Pepperidge Farm® Hamburger Bun.
Burgers are the easiest thing to make for dinner during the summer. Plus, they are a crowd-pleaser as well. So as you’re enjoying the season’s most excellent meal!
