Mango Chicken Lettuce Wraps

I still can’t believe that we have had such strange weather this year.  Snow throughout the entirety of April and now blazing hot in June.   When the weather gets this steamy, I try not to heat up my house too much while cooking meals.   I like to opt for lighter meals during the summer.  Why is it that eating salad for dinner doesn’t seem always to fill me up, but eating lettuce wraps always does?

I have been big into lettuce wraps these past few weeks.  I have been turning every sandwich, taco, salad, and burger into a lettuce wrap.  I prefer romaine lettuce for my lettuce wraps because it is super crunchy.

I found a new product while I was grocery shopping at Super Target.  Canned Mango.   I love mango, but I hate cutting them.  My brother got me this mango cutter a few years ago, and I still have a hard time using it.  When I saw this canned mango, I picked up several cans because I have a few different recipes that I want to try with it.

I made this mango chicken using my Instant Pot, but it can also be made on the stove.  This chicken only took 7 minutes to cook in my Instant Pot, and I topped it with all kinds of yummy things.  Bell pepper, green onions, and Thai chili sauce. 

Here is a little video I put together for you.  I didn’t add too much spice to this because I fed it to my kids, but you can add more if you like.

Mango Chicken Lettuce Wraps

Ingredients

  • 2 tablespoons lime juice
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon ground ginger
  • 2 cloves minced garlic
  • 1 tablespoon oyster sauce
  • 1 teaspoon crushed red pepper
  • 1 8 ounce can of mango with juice
  • 1 pound chicken, cut into 1 inch pieces

Garnish

  • 1 red bell pepper
  • 1 cup frozen mango, thawed
  • 1 teaspoon chopped cilantro
  • 1-2 chopped green onions
  • 1 lime juice from a fresh lime
  • Thai chili sauce

Instructions

  1. Dump the ingredients for the mango sauce into your Instant Pot. Everything but the chicken and stir. 

  2. Cut chicken and add it to your Instant Pot

  3. Cook on high pressure for 7 minutes.  Vent immediately. 

  4. Wash lettuce wraps and prepare garnishes.  

  5. Assemble lettuce wraps.  Place mango chicken on each lettuce wrap. top with more mango, bell pepper, cilantro, Thai chili sauce and green onion. 

These lettuce wraps were excellent.  It kills me a little bit that the photos didn’t turn out the way I wanted, but my family was hungry and life happens.  I have another recipe in the works using this canned mango, stay tuned!
