Hawaiian Tuna Salad Sandwiches

This past month, my husband and I discovered the ultimate secret to making traveling with our kids easier. We started traveling with a small backpack cooler of sandwiches in tow, which makes our family outings easier in so many ways!

In March, we took a family vacation to Orlando. We brought sandwiches on the airplane, which was wonderful because we wouldn’t have had time to eat before our flight. We packed a backpack of sandwiches when we went to theme parks. This meant we didn’t wait in long lines for food, we saved a ton of money, and when our kids started to meltdown, all we had to do was whip out a sandwich for them.

Over Easter, we drove to Chicago, a five-hour car ride. We packed sandwiches and ate in the car. We got there so much faster because we didn’t stop to eat. Plus, we didn’t have kids whining for food because we had food! Did I remember to mention how much money we have saved by packing sandwiches this past month?

 

Sandwiches for lunch or dinner are always a hit with my family.  They love grilled cheese, turkey sandwiches, and peanut butter sandwiches too.  However, tuna salad is probably the favorite amongst my kids.  This Hawaiian tuna salad was a big hit with my family.  My kids loved the addition of the pineapple while my favorite part was the macadamia nuts.

This was super easy and a great way to switch up lunch.  Check out this video I created for you!

 

Hawaiian Tuna Salad

Course dinner, Lunch
Cuisine American, Hawaiian
Servings 4

Ingredients

  • 1 5 ounce can of tuna
  • 2 tablespoons chopped macadamia nuts
  • 1/3 cup pineapple pieces
  • 1/4 cup chopped red onions
  • 1 tablespoon chopped cilantro
  • 1 tablespoon Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon chopped green onion

Instructions

  1. Open the can of tuna.  Drain the liquid and place the tuna in a bowl.  

  2. Prepare ingredients.  chop macadamia nuts, pineapple, onions, and cilantro.  

  3. Mix in the Greek yogurt and mayonnaise into the tuna. 

  4. Fold the rest of the ingredients into the tuna salad. 

  5. Place the tuna salad onto slices of bread and enjoy!  Or place the tuna salad in the fridge for later.  

Now that I have this newfound love of packing sandwiches to take on my family’s outings, I know that I will be packing them often this spring and summer.
